José Ignacio Santiago has a Bachelor´s degree in biological science and enology. He is currently working on his doctoral thesis on the production and oxidative crianza in Pedro Ximénez sweet wines and other naturally sweet wines.
In the year 2000 he began his professional career as an enologist, throughout the years working for S.C.A. Viticulture Our Lady of the Rosary and Bodegas Moreno, among others. He was also a sommelier professor at the Spanish Federation of Hotel Management. He carried out all of these positions while also teaching classes at various institutions.
He has served on the judges’ panel at various competitions, such as the National Competition for ecological wines “Ecoracimos”, the Vinoro Competition and the National Competition of Mezquita Award Wines “City of Córdoba”.
He is co-author of the book “THE MANUAL OF GOOD PRACTICES FOR MONTILLA-MORILES WINES” and is currently writing a weekly column dedicated to wine for ABC Gourmet.
